August 8 will be here before you know it, and you know what that means! Minneapolis Edible Boulevards is excited to announce our free August class will be with Miguel Paz from The Herbivorous Butcher.* The Herbivorous Butcher is a butcher shop that specializes in all kinds of vegan meats and cheese. They make everything from bacon and burgers to ribs and chorizo.
Heart Space Garden, a beautiful garden created by one of Minneapolis Edible Boulevards very own participants in East Phillips, is co-hosting. In class, we'll learn how to use veggies from the garden and foraged ingredients to make Ecuadorian Llapingachos Stuffed with Plant-Based Chorizo & Wild Chive Aji Verde. This dish is based on a traditional Ecuadorian llapingacho, a potato cake flavored with achiote and green onions.

We recommend bringing a chair or blanket to sit on, a water bottle and sunscreen, as the class will take place outdoors in the garden. Whether you attend regularly or this is your first class with us, we’d love to have you join us.

*Please note this is a change from our originally scheduled instructor on this day who had to cancel. We hope to have Tigist Feyisa do a class in the future and are so grateful Miguel Paz was able to move his November cooking class date up to August.
