Vegan Steak Tataki: Offbeast Steak, Caramelized Onion-A1 Jus, Allium Salad, Miso-Olive Oil Emulsion. Scallop & Grapefruit Salad: Dashi-poached Mushroom Scallops, Pea Tendrils, Grapefruit, Hijiki, Yuzu Vinaigette. Korean-Fried Oyster Mushroom Donburi: with Koji-Roasted Carrots, Cucumbers, Pickled Radish, Daikon Sprouts, Shiso, Scallion, Sesame, and Vegan Tonkatsu Sauce.
